Goodbye, Summer. We got along great, but it’s time for Fall to take over. This salad can be your farewell victory march.

NECTARINE RICE SALAD from Rachel Schultz

NECTARINE RICE SALAD
Serves 3-4

3 cups cooked rice
1 cup cilantro, chopped
1 jalapeño, diced
2 lime, juiced and zested
1 tablespoon olive oil
2 ears corn, cooked and removed from cob
2 nectarines, sliced
1/2 cup feta, crumbled
Salt & pepper

To prepare rice, stir together rice, cilantro, jalapeño, juice and zest of 1 lime, and olive oil.

Top with corn, nectarines, and feta. Drizzle salad with remaining lime juice. Season with salt & pepper.
