SAUSAGE & SWEET POTATO QUESADILLAS

Wow, these quesadillas. They took something mexi and made it autumn in America. Because mexi is awesome. And autumn in america is awesome and it is upon us. Also making an appearance in the quesadilla are ground sausage, red onion and jalapeños. (Always jalapeños for my husband!) I always like this for quesadillas, but for this one more than ever I really recommend getting a nice and buttery outside tortilla from the pan!

SAUSAGE & SWEET POTATO QUESADILLAS
4 quesadillas

1 pound ground sausage, cooked
1 sweet potato, diced
1/2 red onion, diced
1 jalapeño, sliced
3 scallions, sliced
8 tortillas
2 cups mexican cheese, shredded

Preheat oven to 400 degrees. Drizzle sweet potato with olive oil. Season with salt & pepper. Arrange in an even layer on a baking sheet. Roast for 40-50 minutes. Place a tortilla in pan over medium high heat and add a layer of cheese. Allow to melt for 1 to 2 minutes. Add sausage, sweet potato, red onion, and jalapeño.

Sprinkle on another layer of cheese and place a second tortilla on top. After about 5 minutes, carefully flip the quesadilla. Allow it to brown for about 5 more minutes before slicing and serving. Top with scallions.

  • 1 pound ground sausage, cooked
