BACON & RADISH SALAD

Have you ever tried to eat the seasons? Maybe that is completely obvious and you are like, of course I eat the seasons.

Well, it is new for me. Because if I want a peach cobbler in January, then I just want what I want and I try to force it. I end up with rock hard imitation peaches or coming home empty-handed entirely. I really loved using so much fresh produce this summer, I am not ready for that to end. And thus, I am going to try and “eat the seasons,” starting with this radish salad.

BACON & RADISH SALAD
Serves 3-4

8 slices bacon, cooked and crumbled
1 red onion, diced
3 bunches radishes, sliced
2/3 cup walnuts
1/4 cup parsley, chopped
1/3 cup olive oil
1/4 cup red wine vinegar

In a skillet, heat red onion over medium heat for 5 minutes. Add radishes and cook for an additional 3 minutes. Toss radishes and red onion with bacon, walnuts, parsley, olive oil, and red wine vinegar in a large bowl.

Ingredients

  • ⅔ cup walnuts
  • ¼ cup parsley, chopped
  • ⅓ cup olive oil
  • ¼ cup red wine vinegar
Instructions
  1. In a skillet, heat red onion over medium heat for 5 minutes.
  2. Add radishes and cook for an additional 3 minutes.
  3. Toss radishes and red onion with bacon, walnuts, parsley, olive oil, and red wine vinegar in a large bowl.
