QUICHE MUFFINS

These could be considered a homemade Egg McMuffin. Well, like that, but better. And probably not really. I do not actually know what an Egg McMuffin is or consists of.

I am now back after googling it, this is most certainly not anEgg McMuffin by any stretch.  But it is a muffin consisting of eggs. And does not “quiche muffin” sound much nicer anyway?

Makes 18 muffins

12 eggs
1/2 cup heavy cream
1/4 cup milk
2 tablespoons homemade taco seasoning
1 cup spinach
1 bell pepper, diced
1/2 onion, diced
1 jalapeno, minced
1 cup cheddar cheese, shredded
1/2 cup peas
1/2 cup corn
Salt & pepper

Preheat oven to 375 degrees. Saute onion in a skillet over medium heat for about 5 minutes. Whisk together eggs, heavy cream, milk, taco seasoning, and salt & pepper.

Stir in cheddar, spinach, bell pepper, onion, jalapeno, peas, and corn. Fill a well greased muffin tin with 1/4 cup batter. Bake for 25 minutes.

    Recently found your blog. Love it all! I was wondering how long these muffins stayed good. How many days were you able to eat them and they still taste fresh?
