PINEAPPLE & COCONUT GUACAMOLE

The term “crack” in recipe titles would certainly make a list of my least favorite things. It is trashy and pretty insensitive to the horrors of drug abuse. Sorry, I know I am probably being the person who is not fun to talk to dinner parties with this. It is just gross and I do not associate street drugs with appetizing recipes. I will acknowledge, however, that there are (obviously) foods I am capable of eating compulsively. A bowl of a cool, fresh guac and some nice tortilla chips is certainly one of those things. Put it in front of me and it will quickly be gone.

PINEAPPLE & COCONUT GUACAMOLE from Rachel Schultz-2

PINEAPPLE & COCONUT GUACAMOLE
Serves about 2 cups

2 avocados, mashed
1/2 cup pineapple
1/4 red onion
2 tablespoons coconut, shredded
1/4 cup cilantro
1 jalapeno
1 tablespoons lime juice
1/4 cup cilantro
Salt & pepper

Pulse red onion, pineapple, cilantro, and jalapeno in a food processor.

Remove from processor and combine with avocado, coconut, lime juice, and salt & pepper.

  • ½ cup pineapple
  • ¼ red onion
  • 2 tablespoons coconut, shredded
  • ¼ cup cilantro
  • 1 jalapeno

  • Salt & pepper
Instructions
  1. Pulse red onion, pineapple, cilantro, and jalapeno in a food processor.
  2. Remove from processor and combine with avocado, coconut, lime juice, and salt & pepper.
