GOAT CHEESE & BLACK PEPPER POPOVERS

After my sweet New Englander friend Joanna shared her banging recipe for fluffy popovers, I knew I wanted to share another variation with you. This time, we added goat cheese & black pepper to the mix. As well as a generous drizzling of honey. (Few foods would ever be hindered by adding a “generous drizzling of honey.”)

Serves 6 popovers

1 cup flour, sifted
1/2 teaspoon salt
1 cup milk
2 eggs
4 ounces goat cheese
1 teaspoon black pepper
2 tablespoons honey

Preheat oven to 425 degrees. Stir together flour, black pepper, and salt. Incorporate milk and eggs into dry ingredients.

Divide batter into popover (or muffin) pan.

Whip together honey and goat cheese in a stand mixer. Divide whipped cheese and drop into center of each popover’s batter. Bake for 30 minutes. Top with additional honey.
