GRAPE & SAUSAGE BARLEY SALAD

This meal is not easily described such that people would instantly know what to expect. Like if you said we are having lasagna for dinner. When my husband saw it in the “Meals” calendar in iCal when he got home from work (can you handle how tech-savvy we are?) he wondered aloud what that was going to be all about.

The way I explained it to him, and the best I can do for you, is this. Imagine you are walking through a pleasant forest. The type where Goldilocks or Snow White would have been (except no one is cutting out people’s hearts here.) You happen upon a little cottage and meet a nice, homely family living inside. They invite you to stay for dinner and serve you this, all with crops grown from their plot in the backyard.

Serves 3-4

1/4 cup pine nuts
3 cloves garlic, minced
1 cup grapes, halved
1/4 cup parsley, chopped
1 bunch kale, sliced
1 cup edamame
1 tablespoon olive oil
1 cup barley
2 tablespoons red wine vinegar
3 tablespoons olive oil
1 teaspoon sesame oil
1 teaspoon honey
5 sausage links, cooked
5 green onions, sliced
Salt & pepper
Sesame seeds

Toast pine nuts and garlic in a skillet over medium heat for 2 minutes. Add grapes and sauté for 5 minutes. Remove ingredients from heat and season with parsley. Set aside.

Place kale and edamame in skillet. Drizzle with olive oil and season with salt & pepper. Cook until kale is wilted. Prepare barley according to package instructions. Whisk together red wine vinegar, 3 tablespoons olive oil, sesame oil, honey, and salt & pepper. Toss together sausage, grape mixture, barley, sautéed kale, and dressing. Top with green onions.

  • 5 sausage links, cooked
  • 5 green onions, sliced
  • Salt & pepper

Instructions
  1. Toast pine nuts and garlic in a skillet over medium heat for 2 minutes.
