ONE POT CHICKEN LO MEIN
Serves 3-4
2 cups vegetable broth
3 chicken breasts, cubed
12 ounces fettucine pasta
2 cloves garlic, minced
1 bell pepper, sliced
4 carrots, sliced
2 teaspoons sugar
1/2 teaspoon sriracha sauce
3 tablespoons soy sauce
1 tablespoon sesame oil
2 teaspoons rice wine vinegar
1/4 teaspoon red pepper flake
1/2 teaspoon onion powder
3/4 cup peas
3 green onions, sliced
Bring 2 cups water and vegetable broth to a boil in a large stockpot. Reduce to simmer and add chicken, cooking for 10 minutes. Add fettuccine, garlic, bell pepper, carrot, sugar, sriracha sauce, soy sauce, sesame oil, rice wine vinegar, red pepper flake, and onion powder to pot. Bring to boil and stir occasionally for 8-9 minutes. Add peas and cook for 1 minute. Strain any excess liquid and top with green onion.
