EASY HOME FRIES BREAKFAST BAKE

At least twice a week I am slicing up potatoes to roast. Whether it is sweet potatoes for a fun side or our beloved red skin potatoes for the classic marinaded chicken + sautéed green beans + roasted red skins dinner.

Beyond suppertime, I have gotten really into hash browns and home fries as my favorite staple for breakfast. Try experimenting with substituting potatoes for bread in any savory breakfast casserole recipes you have. It makes for a healthier and paleo-ish option.

Serves 3-4

10 red skin potatoes, diced
3 tablespoons olive oil, divided
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound Italian sausage, cooked and crumbled
1 yellow onion, diced
3 cloves garlic, minced
1 bell pepper, diced
6 eggs
1/3 cup milk
1 and 1/2 cups shredded cheddar, divided
3 green onions, sliced

Preheat oven to 425 degrees. Drizzle red skin potatoes with 2 tablespoons olive oil and arrange onto a baking sheet lined with parchment paper. Season with salt and pepper. Roast potatoes for 40 minutes, flipping halfway through bake time. Meanwhile, saute onion with 1 tablespoon olive oil in small skillet over medium heat for 5 minutes. Add bell pepper and cook for 2-3 more minutes, until onions are tender. Add garlic and cook for 1 minute. Remove from heat. In a bowl, whisk together eggs and milk. Stir in 1 cup of cheddar. Transfer roasted potatoes, sausage, onion, bell pepper, and garlic to a 1 and 1/2 quart baking dish. Pour egg mixture over ingredients. Reduce oven heat to 350 degrees and bake for 45 minutes. Top with green onion.
