ASIAGO WALNUT CHICKEN SALADS

David and I are always experimenting with salad combinations. Salads are probably my favorite dinner ever. I would be okay with living on salads and cake for life.

Anyway, when we tossed together this mix one night, we were both really feeling it, and proceeded to make it again that week. And the next.

ASIAGO WALNUT CHICKEN SALADSASIAGO WALNUT CHICKEN SALADS
Serves 2

1/2 cup olive oil
1/4 cup balsamic vinegar
2 garlic cloves
1 tablespoon mustard powder
1/4 teaspoon salt
1/4 teaspoon pepper
3 cups mixed greens
2 carrots, peeled and chopped
2 green onions, sliced
1/2 cup asiago cheese, grated
1/4 cup walnuts
2 chicken breasts, cooked and sliced

To make dressing, pulse together olive oil, balsamic vinegar, garlic, mustard powder, salt, and pepper. Toss greens, carrots, green onion, asiago, walnuts, and chicken.

    We love salads in this house too, and are often concocting our own. This looks fabulous. Can’t wait to try it. :-)

    This looks incredibly good and I happen to have a container of asiago grated that I used last night with some chicken breasts. Can’t wait to try it! We make a tomato salad that includes pepperoni, mozzarella, and thinly sliced red onions topped with a balsamic vinegrette – SO good.

    The front stairway is looking really great – lots of work, huh? But it’ll be so worth it when it’s done.
