ROMESCO SAUCE

Romesco is a sauce made of roasted red peppers and nuts. We do almonds. I also like to put in a dash of red pepper flake for a little spice. And garlic, of course. Always garlic.

Pulse this in the food processor or blender a few times are you are ready to rock. Of course you can put it on pasta, and next week I will be sharing a recipe for using it with gnocchi.

ROMESCO SAUCEROMESCO SAUCE
Serves about 1 cup

12 ounces roasted red peppers
1/2 tomato
3 cloves garlic
1/4 cup almonds
1 tablespoon olive oil
1 teaspoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon parsley
A dash of red pepper flake

Place ingredients in food processor and pulse until smooth.
