Loaded Goat Cheese Baked Sweet Potatoes

Goat cheese is one of our favorite cheeses to splurge on (compared to regular shredded mozzarella and cheddar types). A delightful application for it? Baked sweet potatoes. Along with spicy kale and crispy bacon? Even better. A note on baking potatoes, I skip poking holes in the skin with a fork. I do not find it improves the texture and I think the only scenario it is worthwhile for is if you are in a pinch for time and need them to cook a bit faster.

LOADED GOAT CHEESE BAKED SWEET POTATOES
Serves 4

4 sweet potatoes
1 onion, sliced
2 cups chopped kale
2 tablespoons olive oil
A dash of nutmeg
A dash of red pepper flake
3/4 pound bacon, cooked and crumbled
1/4 cup dried cherries
4 ounces goat cheese, crumbled
1/4 cup parmesan, grated

Preheat oven to 425 degrees. Arrange sweet potatoes on a lined baking sheet and roast for 50-55 minutes, until tender throughout.

In a skillet over medium heat, saute onion and kale in olive oil for 5-7 minutes. Season with nutmeg and red pepper flake. Slice baked sweet potatoes vertically and stuff with kale, bacon, dried cherries, goat cheese, and parmesan.
