BEEF TENDERLOIN CROSTINI WITH WHIPPED GOAT CHEESE

Parties that serve “heavy horderves” are totally where it is at. Filling up on snack-y things is a good way to do a lighter meal. Going this route also keeps venturing into hostessing easier too.

This little appetizer is substantial enough to get people full, and comes together quickly in 30 minutes or less.

Serves 16 crostinis

1/2 pound beef tenderloin
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil, divided
4 ounces goat cheese
4 ounces ricotta
1/2 teaspoon honey
A pinch of red pepper flake
1 baguette, sliced
1 batch my favorite pesto

Preheat oven to 350 degrees. Season beef tenderloin with salt and pepper. Sear with 1 tablespoon olive oil in a cast iron skillet over medium heat for 2-3 minutes on each side. Transfer pan to oven and roast for 10-15 minutes. Place meat on a cutting board and cover with aluminum foil. Let rest for 10 minutes before slicing.

Walnut Pesto

Meanwhile, pulse together goat cheese, ricotta, 1 tablespoon olive oil, honey, and red pepper flake in a food processor. Spread whipped goat cheese mixture onto baguettes. Top with sliced tenderloin and pesto.
