APPLE & CHICKEN SWEET POTATO STIR FRY

September 26, 2016

Okay, let me share with you what I think is my all time favorite gluten free dinner. It is is this right here! I love it because it is unique, flavorful, and filling. One pan! Seven ingredients! It is one of the few gluten free meals where I can say I really do not miss the element of grains at all. (I am looking at your cauliflower rices.) Plus, the smell of melty coconut oil – yes please. (If needed, you can substitute the coconut oil for regular olive oil.)

      Fun!

Um . . . I think that the recipe is missing the chicken part. (Do you cook it with the other items? Or use precooked chicken? And if so, how much?)

    • Rachel Schultz

      Ah great catch. Silly me!

Good morning Rachel – I have a good friend who eats gluten free and I thought I would pass this recipe along to her. May even try it myself because it has everything in it I love. You forgot to add the chicken amount – although I imagine you could add to your own taste. But I did want to give her the exact amount called for. Thanks for all the good recipes and I can’t wait for your cookbook in February – this must be so exciting for you!

Oops! Thanks Chris. You are so supportive : )
