30 MINUTE TACO CORNBREAD

A dinner in 30 minutes, I am a simple girl and these are what make me happy. Mexican spice, cornbread, fresh ingredients. This is the meal for me.

Serves 3 to 4

1 pound ground turkey
1 tablespoon mexican seasoning
9×9 pan of cornbread, prepared
15 ounces black beans
1/4 red onion, diced
3 green onions, sliced
1 cup cheddar, shredded
1 romaine, sliced thinly
1 roma tomato, diced

Brown turkey in a skillet over medium heat until no pink remains. When turkey is mostly cooked, strain liquid from pan and season with mexican seasoning. Slice cornbread and top with turkey, black beans, red onion, green onion, cheddar, romaine, and tomato.
