SOUTHWEST TORTELLINI PASTA SALAD

As we are all dreaming of embracing all the summer vibes, I need a good and fresh warm weather side for our cook outs and summer gatherings. Tortellini are a nice little something extra to use for pasta salad instead of plain noodles. I might go this route for slightly mexi option or there is also this caprese pasta salad.

To make this an entree we grill some some chicken breasts sprinkled with a mexican seasoning and shred it up to mix in too.

Serves 5 to 6

1 pound frozen tortellini, cooked al dente
30 ounces black beans
15 ounces corn
1 red pepper, diced
1 roma tomato, diced
1/4 cup red onion, diced
1/4 cup cilantro, chopped
2 tablespoons red wine vinegar
4 tablespoons lime juice
3 tablespoons honey
2 tablespoons olive oil
1/2 teaspoon salt

Prepare tortellini al dente, according to package instructions. Drizzle with additional olive oil to prevent sticking and allow to cool. In a large bowl, toss together tortellini, black beans, corn, red pepper, tomato, red onion, and cilantro.

In a separate bowl, whisk together red wine vinegar, lime juice, honey, olive oil, and salt. Toss salad in dressing and chill for 1-2 hours.

    This looks great! A bonus of this recipe is that it could be made from all Aldi ingredients! Since Aldi is always my first stop for grocery shopping, I’m always excited to find recipes that don’t require me to go anywhere else. :)
