If your weeknight dinners need a little mix up, trying Indian one night may be the way to do it. Healthy. Fresh ingredients. Eating this indulges my imaginary alter-ego who runs every day, does stretching routines in the mountains, and does not eat sugar. I do not really do any of that, but this is healthy and easy, so even I managed.
PINEAPPLE CURRY RICE BOWLS
Serves 4
1 and 1/2 cups rice
1 pound ground turkey
16 ounces curry sauce
2 cups pineapple, diced
2 carrots, peeled in ribbons
1 zucchini, peeled in ribbons
Cilantro
Prepare rice according to package instructions. Brown turkey in a skillet over medium heat. When mostly cooked, pour in curry sauce. Serve over rice and top with pineapple, carrots, zucchini, and cilantro.
