CARROT SALAD WITH CITRUS DRESSING

Carrots were my favorite vegetable as a child. Scratch that, they were the only vegetable I liked as a child. And, for the times when I occasionally do a no sugar lifestyle, (seriously? I do that?) the natural sweetness of carrots is so much stronger, eating one is like a dessert.

This salad was an ideal lunch today. Filling, original, and flavorful, but still light and healthy. Plus, leftovers hold better than lettuce based salads – even with dressing. Also I just wanted it to be publicly shared that goat cheese is the most important food to me always.

Serves 5 to 6

10 carrots, peeled and thinly sliced
2 teaspoons olive oil
1/4 cup orange juice
2 tablespoons lemon juice
1/3 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon red pepper flake
2 ounces goat cheese, crumbled
1 tablespoon sesame seeds
1 avocado, sliced
Green onion, sliced

Preheat oven to 400 degrees. Toss carrots in olive oil and arrange on a lined baking sheet. Roast for 15 minutes. Meanwhile, whisk together orange juice, lemon juice, olive oil, salt, pepper, and red pepper flake. Toss roasted carrots with dressing and top with goat cheese, sesame seeds, avocado, and green onion.
