When I first started making these muffins I wanted to find or create a recipe that could be made with all ingredients I keep on hand. No apple, no problem. When I need an injection of fall feels or just something easy for breakfasts this week, I can spontaneously make these. If you’re like me applesauce is a staple you just keep around in the pantry. Possibly due to toddler lifestyle. But with or without that, I love applesauce in baked goods because it makes them absurdly soft.
APPLESAUCE OAT MUFFINS
Serves 12 muffins
1 cup old fashioned oats
1 cup applesauce
1/2 cup milk
1 egg
1/2 teaspoon vanilla
1/3 cup vegetable oil
1/4 cup brown sugar
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
Preheat oven to 375 degrees. Combine ingredients until an evenly distributed batter forms. Divide batter into lined or greased muffin pan. Bake for 18-20 minutes.
