EASY SKILLET CHILI

Ingredients
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 garlic cloves, minced
  • 15 ounces kidney beans
  • 1 cup tomato juice
  • ½ cup water
  • 4 teaspoons chili powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ cup rice
  • 15 ounces corn
  • 1 cup cheddar, shredded
  • 3 green onions, sliced
  • 1 jalapeño, minced
Instructions
  1. In a large skillet, brown beef with onion, pepper, and garlic over medium heat. Strain liquid from pan.
  2. Add kidney beans, tomato juice, water, chili powder, oregano, salt, and rice to skillet. Cover and reduce heat to medium-low for 25 minutes.
  3. Add corn to skillet and top with cheese and cook for five more minutes, until cheese is melted.
  4. Top with green onions and jalapeño.
