EASY SKILLET CHILI
- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 garlic cloves, minced
- 15 ounces kidney beans
- 1 cup tomato juice
- ½ cup water
- 4 teaspoons chili powder
- 1 teaspoon oregano
- 1 teaspoon salt
- ½ cup rice
- 15 ounces corn
- 1 cup cheddar, shredded
- 3 green onions, sliced
- 1 jalapeño, minced
- In a large skillet, brown beef with onion, pepper, and garlic over medium heat. Strain liquid from pan.
- Add kidney beans, tomato juice, water, chili powder, oregano, salt, and rice to skillet. Cover and reduce heat to medium-low for 25 minutes.
- Add corn to skillet and top with cheese and cook for five more minutes, until cheese is melted.
- Top with green onions and jalapeño.
