PUMPKIN CUPCAKES

Ingredients
  • 1 cup flour
  • 1 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup pumpkin puree
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 eggs
Instructions
  1. Preheat oven to 350 degrees.
  2. Stir together flour, nutmeg, baking powder, cinnamon, baking soda, and salt.
  3. In a separate bowl combine pumpkin, sugar, brown sugar, vegetable oil, and eggs.
  4. Slowly incorporate dry and wet ingredients together.
  5. Divide batter into a lined muffin pan.
  6. Bake for 15-18 minutes.
  7. Allow cupcakes to cool completely before frosting.
