PUMPKIN CUPCAKES

Serves: 12 cupcakes
- 1 cup flour
- 1 teaspoon nutmeg
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup pumpkin puree
- ½ cup sugar
- ½ cup brown sugar
- ½ cup vegetable oil
- 2 eggs
- Preheat oven to 350 degrees.
- Stir together flour, nutmeg, baking powder, cinnamon, baking soda, and salt.
- In a separate bowl combine pumpkin, sugar, brown sugar, vegetable oil, and eggs.
- Slowly incorporate dry and wet ingredients together.
- Divide batter into a lined muffin pan.
- Bake for 15-18 minutes.
- Allow cupcakes to cool completely before frosting.
