LOADED BAKED POTATO CASSEROLE
- 4 russet potoates (or 8 golden potatoes), cubed
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ cup bacon crumbles
- 2 chicken breasts, sliced into one inch pieces
- 2 tablespoons butter, sliced
- 2 cups grated cheddar
- Green onions, sliced
- Preheat oven to 350 degrees.
- Place potatoes in a 9x13 baking dish and toss with olive oil, salt, and pepper. Layer on bacon, chicken, butter, and cheddar.
- Bake for 60 minutes. Top with green onion.
