AVOCADO PESTO PASTA
- 1 pound pasta, cooked al dente
- 2 cups my favorite pesto
- 1 avocado
- 3 chicken breasts, cooked & shredded (optional)
- Parmesan, grated
- While pesto is still in food processor, add avocado and pulse until creamy.
- Combine avocado pesto with cooked pasta and chicken.
- Top with parmesan.
