TILAPIA BURGERS & WATERMELON SALSA

Ingredients
  • 2 pounds tilapia
  • 1 cup panko
  • 2 tablespoons dijon mustard
  • 2 garlic cloves, minced
  • 1 avocado
  • 1 cup watermelon, diced
  • ¼ red onion, diced
  • ½ cup cilantro, chopped
  • 1 lime
  • 8 whole wheat buns
  • Salt & pepper
Instructions
  1. Pulse tilapia in food processor until no large pieces remain.
  2. Transfer to bowl and add garlic, mustard, panko, salt & pepper.
  3. Mix and form 8 patties.
  4. Cook patties about 5-7 minutes on each side in a pan over medium heat.
  5. Meanwhile, combine watermelon, red onion, cilantro, and lime juice.
  6. In a separate bowl, mash avocado until creamy.
  7. Spread a layer of avocado on cooked meat.
  8. Top with watermelon salsa.
  9. Serve on toasted buns.
