TILAPIA BURGERS & WATERMELON SALSA

Serves: 8 burgers
- 2 pounds tilapia
- 1 cup panko
- 2 tablespoons dijon mustard
- 2 garlic cloves, minced
- 1 avocado
- 1 cup watermelon, diced
- ¼ red onion, diced
- ½ cup cilantro, chopped
- 1 lime
- 8 whole wheat buns
- Salt & pepper
- Pulse tilapia in food processor until no large pieces remain.
- Transfer to bowl and add garlic, mustard, panko, salt & pepper.
- Mix and form 8 patties.
- Cook patties about 5-7 minutes on each side in a pan over medium heat.
- Meanwhile, combine watermelon, red onion, cilantro, and lime juice.
- In a separate bowl, mash avocado until creamy.
- Spread a layer of avocado on cooked meat.
- Top with watermelon salsa.
- Serve on toasted buns.
