SMOKED SAUSAGE & SPINACH PASTA

Serves: 3-4
- 14 ounces smoked sausage, sliced
- 2 tablespoons olive oil
- ½ pound pasta
- 15 ounces white beans
- ½ pint cherry tomatoes, halved
- 2 cups spinach
- ¼ cup pine nuts
- 2 carrots, sliced
- Parmesan
- Salt & pepper
- Heat sausage in a skillet over medium heat for about 5 minutes.
- Meanwhile, prepare pasta according to package instructions. Add carrots and olive oil to skillet and continue to cook for about 5 minutes on low.
- Add white beans, tomatoes, and spinach. Stir and cook until spinach is wilted.
- Add in cooked and strained pasta. Season with salt & pepper. Top with pine nuts and parmesan.
