SMOKED SAUSAGE & SPINACH PASTA

Ingredients
  • 14 ounces smoked sausage, sliced
  • 2 tablespoons olive oil
  • ½ pound pasta
  • 15 ounces white beans
  • ½ pint cherry tomatoes, halved
  • 2 cups spinach
  • ¼ cup pine nuts
  • 2 carrots, sliced
  • Parmesan
  • Salt & pepper
Instructions
  1. Heat sausage in a skillet over medium heat for about 5 minutes.
  2. Meanwhile, prepare pasta according to package instructions. Add carrots and olive oil to skillet and continue to cook for about 5 minutes on low.
  3. Add white beans, tomatoes, and spinach. Stir and cook until spinach is wilted.
  4. Add in cooked and strained pasta. Season with salt & pepper. Top with pine nuts and parmesan.
