POMEGRANATE & LEMON COOKIE BARS

Ingredients
  • 1 batch sugar cookie dough
  • 3 ounce white chocolate chips
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 1 pomegranate, de-seeded
  • 1 lemon, zested
Instructions
  1. Preheat oven to 325 degrees.
  2. Prepare cookie dough (leaving out cinnamon sugar snickerdoodle option in linked recipe above). Spread dough in an even layer on a rimmed baking sheet.
  3. Bake for 20-22 minutes. Allow to cool completely.
  4. Whip cream cheese with an electric mixer. Meanwhile, melt white chocolate.
  5. Slowly incorporate powdered sugar into cream cheese, continuing to beat. Add white chocolate and mix until smooth.
  6. Spread frosting over cookie bars.
  7. Top with pomegranates and lemon zest.
