SHRIMP PESTO PIZZAS

Ingredients
  • 1 batch perfect pizza dough
  • ½ batch pesto
  • ½ pound shrimp (I used salad shrimp)
  • 2 cups mozzarella, shredded
  • 2 cups arugula
  • Lemon wedges for spritzing
  • Salt & pepper
Instructions
  1. Preheat oven to 450 degrees.
  2. Divide dough into four balls. Roll out about ½ an inch thick.
  3. Spread pesto over dough. Sprinkle with mozzarella. Top with shrimp.
  4. Bake for 10 minutes.
  5. Top with arugula, lemon juice, and salt & pepper.
