Lay spaghetti squash into a glass 9x13 baking dish. Roast for 40 minutes.
Meanwhile, drizzle onion and peppers with olive oil in a second 9x13 baking dish. Add to oven with squash and roast for 15 minutes. Top with lime juice.
Brown turkey with taco seasoning in a skillet over medium heat until cooked throughout.
Using a spoon, remove squash from peel. Stir squash together with turkey, peppers, and onion. Fill squash shells with mixture.
Top with ciltanro and mexican cheese.
