CINNAMON SWIRL QUICK BREAD

Ingredients
  • 1 cup butter, softened
  • 2 and ⅔ cups sugar, divided
  • 2 eggs
  • 4 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 cups buttermilk
Instructions
  1. Preheat oven to 350 degrees.
  2. Beat together butter and 2 cups sugar. Add eggs, continuing to mix.
  3. Add flour, baking soda, and buttermilk, mixing until an even batter forms.
  4. Fill greased loaf pans with half of batter. Stir together cinnamon and ⅔ cup sugar. Pour ¼ of cinnamon sugar in each loaf pan. Transfer remaining batter to loaf pans. Top with remaining cinnamon sugar. Using a butter knife, gently swirl cinnamon sugar into batter.
  5. Bake for 45-50 minutes.
