quinoa pizza bites

Ingredients
  • ½ cup quinoa, uncooked
  • 2 eggs
  • ¼ onion, finely chopped
  • 1 cup mozzarella, shredded
  • 1 clove garlic, minced
  • 2 tablespoons basil
  • 2 tablespoons oregano
  • Pizza sauce for dipping
Instructions
  1. Preheat oven to 350 degrees. Bring quinoa and 1 cup water to a boil over medium-high heat. Cover and simmer for 15-20 minutes. Combine quinoa eggs, onion, mozzarella, garlic, basil, and oregano into a large bowl and stir.
  2. Divide mix into a muffin pan.
  3. Bake for 15-20 minutes and serve with dipping sauce.
