Preheat oven to 350 degrees. Combine oats, pecans, olive oil, maple syrup, vanilla, nutmeg, cinnamon, and salt into a large bowl. Mix well.
Transfer mix to a line baking sheet and spread into an even layer. Bake for 20 minutes, stirring halfway through. Remove from oven and add cranberries to mixture. Return to oven for 5 more minutes.
Remove and add shredded coconut, baking for a final 5 minutes (that's 30 minutes baking in total).
