Here I stand, I like fruit in sandwiches. (Consider this panini with green apples.) Not to get into sandwich classification anarchy, but quesadillas are also good with fruit, for the same principle. Red pear, caramelized onion, lots and lots of mozzarella. It’s a quesadilla with some different than usual flavorings and I am VERY into it.
SPINACH & RED PEAR CHICKEN QUESADILLA
Makes six quesadillas
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 onion, sliced
Butter
6 whole wheat tortillas
4 cups shredded mozzarella
1 cup spinach
1 red pear, sliced
Preheat oven to 450 degrees. Arrange chicken in a 9×13, foil-lined baking dish. Drizzle chicken with olive oil and season with salt and pepper. Roast for 45 minutes. Shred chicken.
Saute onion in a skillet over medium heat with a small drizzle of additional olive oil until very tender, about 7 minutes. Lightly coat a skillet with butter and lay a tortilla in pan over medium heat and sprinkle about 2/3 cup of mozzarella. Allow to melt for 1-2 minutes. On half of the tortilla, layer on spinach, chicken, onions, and red pear.
Fold tortilla in half and press until melted cheese holds quesadilla closed. Slice quesadilla into triangles.
