Crock pots are amazing little wonders. Will my newlywed intrigue soon fade? I delight in checking it every 30 minutes, with new astonishment of how little work I am doing. David had work off today, so I wanted to give him a chance to fascinate and marvel the way I do. We’re just child-like in that way.

I acknowledge this is ridiculous but I’m getting domestic and things are new.

A dressing I like using for this dish is Simple Truth Italian. It’s not the weird orange color while still being homogenous (compared to ones where the oil and vinegar separate) which is good for crockpot stuff or marinades.

Serves four

1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon oregano
4 boneless, skinless chicken breasts
1 and 1/4 cups italian dressing (about 12 ounces)
4 large white potatoes, quartered
6 carrots, sliced
Parmesan, grated
A dash of red pepper flake

Season chicken breasts with salt, pepper, and oregano.

Place chicken breasts into slow cooker and pour in italian dressing. Place potatoes and carrots on top.

Cook on high for 5-6 hours or low for 7-8 hours.

Top with parmesan and a dash of red pepper flake.

Cook on high for 5-6 hours or cook on high for 7-8 hours… think there might be a typo… should be corrected

    • Rachel Schultz

      Thank you!

  • eric

needed to be in slow cooker for 5-6 hours. Chicken a little dry.

  • dragons3

I made this yesterday. I had some fresh asparagus, so I threw it in the slow cooker about an hour before dinner. YUM! This is one recipe that will be used frequently in my house.

  • Connie

FYI: As an alternative, I used Greek Vinaigrette dressing instead of Italian. It includes Feta cheese, so I left off the Parm. It was very good too!

  • Paige

Really excited to try out this recipe today!!

  • Lynn

Oh boy 4 hours and the Carrots and potatoes are stil hard and not cooked

  • karen

Rachel thank you …love recipe I am making for 4 the time…I use boneless thighs….Newman’s lite Italian and last batch I added a little chicken broth ..used a large pkg of thighs so do low 8 hr . Great

Potatoes and carrot didn’t get done in 4 hours bummer

  • Megan

Its definitely 3-4 hours on high not low! After 4 hours of being in my crockpot, the potatoes were still hard! :(

  • Carmela

Followed recipe and my potatoes and carrots were still uncooked and hard after 4 hours cooking on low. I only used 3 small potatoes cut in halves and 3 carrots cut into sections. What went wrong?

    • Lisa

A lot of slow cookers are different. My slow cooker cooks on low like it would on high. I never use high because everything would come out like molten lava. lol Also, it depends on how big you cut everything and how thick your chicken is!

  • Leslie

Help… I’m reading thru all your comments and the times and info vary a lot since you first posted. You have on here 3-4 hours on low… But within the comments 6 hrs on high is fine. I’m confused and really want to make tonight! I have standard thickness chicken.

  • I have this in the crackpot right now. I can’t wait to see how it turns out!

  • Fran

If I am using frozen boneless chicken breasts how long should I cook it?

  • Tammy

Making this for dinner tonight yummm looks so good thank you for the recipe

  • Cheryl

I really great crock pot recipe. I add fresh onion also.

  • tomi

Im a crockpot newbie. If I use frozen breast how long and how high? I have only done one dish (pork) in my pot.

  • Have you ever used this as a make ahead freezer meal? I’m looking to make up some freezer/crockpot meals and love this recipe.

  • Taylor

    So yummy!!!

  • Joann

Hi Rachel, I just saw this recipe for the Italian Chicken, and I was wandering if you could omit the potatoes and carrots? Thinking about serving over mashed potatoes or egg noodles, what do you think? Can’t wait to try this looks delicious :). Thanks for posting these recipes. Also got the recipes for the Chicken Fried Rice and the Teriyaki Chicken, can’t wait to them also. :) Thanks a bunch

  • penelope

Would using olive oil and vinegar work instead of Italian dressing?

    • Rachel Schultz

  • Can I use frozen veggies instead of carrots?

  • Linda

I don’t have any carrots so; can I use frozen veggies ?

    • Rachel Schultz

      Yes, definitely.

  • Emily

This looks good but I’m confused about the time. How can 3-4 hours on low, or 8 hours on low, or 6 hours on high all yield the same result? Does it just depend on the thickness of chicken breast you choose?

    • Rachel Schultz

Yes, there is a lot of variance based on the cut you’re using. Also, all slow cookers are very different. My advice would be to just know your cooker and how it operates. Keep an eye out and it should do fine!

  • Kayla

    No carrots

  • Sarah

This recipe sounds amazing and I can’t wait to try it! I’ve had bad luck with chicken in the crockpot though, would 8 hours on low be too long? I would like to be able to put it on in the morning before I leave for work, I’m not close enough to home to do it over lunch.

    • Rachel Schultz

That would be fine. I’d aim for thicker chicken breasts if possible.

  • Sara

What kind of Italian dressing do you use?

    • Rachel Schultz

      I like Paul Newman’s.

  • melissa france

Gonna make this in my crock pot tomarrow mmmm I can already taste it

  • Laurie

This was totally delicious. Would like to try making it with boneless chicken thighs. How long do you think I should cook it? Thank you.

    • Rachel Schultz

It varies a lot depending on your slow cooker. I’d try checking it often the first time! Start with around the same.

  • Michelle

  • Tayler

Is it possible to cook this on HIGH for 6 hours?

    • Rachel Schultz

  • JenR

This website is wonderful! Thank you for sharing your recipes. Your recipes are big on taste, creative and easy to prepare! Thank you, thank you, thank you!

Have a wonderful day and a great weekend!

    • Rachel Schultz

      Thanks so much! You too!

  • I made this today to host a few friends for Father’s Day lunch. I used chicken tenderloins and Italian seasoning instead of chicken breasts and oregano because that’s what I had on hand. I also cooked it for about 4 hours on high. I started the crock pot as we left for church and the food was ready when we arrived home. Everyone enjoyed it. Thanks for the recipe!

  • brandy

What does it mean when it says to pour remaining dressing in basin?

    • Rachel Schultz

Pour the rest of the dressing that you have not poured into the crock pot in at that time.

      • Anonymous

Thank you! I thought so but wasn’t 100% sure. :)

  • Anna Gross

Hi Rachel, i wanted to know if i use frozen chicken breast and i cook it on low would i need to add more hours to the cooking time

  • Amanda

Can you use frozen chicken breast?

    • Rachel Schultz

      • Lillian Bristol

You said yes after two questions were asked, can you please clarify. Yes, you can use frozen, or yes, it needs more cooking time, or both, and how much more time? Thanks.

  • Kristy

Any recommendations for what type of italian dressing you use?

    • Rachel Schultz

I find the ones where the ingredients don’t “settle” work best.

  • Amanda

    Hi Rachel,
How would cooking it on HIGH work? I started this today around 2pm, lost track of time, and started it on LOW. If I switch it to HIGH now, would that be okay? If so, how would I adjust the time?

    • Rachel Schultz

Yes, you can cook on High for 3-4 hours. Thanks!

  • Michelle KW

Rachel, can this chicken be adapted to be dairy free? Any suggestions, or should I not bother trying? Thanks for your great recipes!

    • Rachel Schultz

If you skip the parm, I think it will still be pretty yummy.

  • Need to start my slowcooker this afternoon. This chicken looks amazing!

    • Rachel Schultz

Yay! Hope it turns out great.

  • Tiffany B

I made this today and OMG……I’m eating it right now and it is soo good….the house smells soo good! It really is the best thing that has come out of my crock pot!~ Thank You for posting this….

    • Rachel Schultz

That’s great to hear! Thanks, Tiffany.

I got around to making this recipe today – this is the BEST thing I have EVER made in a crockpot!!!!!! Absolutely fabulous and I’ll be recommending to all my family and friends :)

  • Kalee

I am making this today! Looks Good.

  • Sarah

This looks amazing. I have your “Worlds Best Chicken” in the oven right now. I love your blog- thanks for putting in all this work and sharing your recipes with the world… I found you through Pinterest.

  • Anonymous

Sounds yummy. I have a question, though, what do you mean when you write “pour remaining dressing to basin”

    • In the beginning your pour a small amount into the base of the slow cooker, and on that step you pour the rest in. Thanks for the question, it should say “into” instead of in.

    • Tiara! You have such a cool site! Thanks for reading and for the reblog.

      • Thanks Rachel! I’ve enjoyed your blog as well! Thank your or the great recipes and DIY tips!
