TROPICAL CHICKEN BURGERS

You guys. You guys. You guys!! We designed and ordered our christmas cards last night. I am (perhaps) excessively excited for this. Maybe because it is our first christmas together? Maybe because Christmas may be becoming my favorite holiday? Our concept is pretty fun, but the photo shoot was a bit tedious. I cannot wait to share it with everyone. (As if you could not tell.) Enjoy some Christmas-in-July tropical burgers until then.

TROPICAL CHICKEN BURGERS
Serves 3-4

1 pound ground chicken
1 red bell pepper, diced
2 green onions, sliced
1 jalapeño, minced
1 mango, diced
1/4 cup unsweetened coconut, shredded
3 tablespoons dried parsley
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg
Burger buns

Combine ground chicken with bell pepper, green onions, jalapeño, mango, coconut, parsley, salt, pepper, and egg in a large bowl. Form meat into burger patties. Grill burgers on medium-high heat for 4-5 minutes on each side. Serve on buns with sliced mango, sliced peppers, and lettuce.
