You may have noticed in my photos – I got a new camera! It’s very exciting and fun and I can tell a difference in photo quality right away. I hope it makes an enjoyable experience for you as the reader too. These little muffins are a fun, snack-y, type food. With enough of them it can feel as filling as a meal. Definitely right at home on a game day or afternoon snack setting as well.
PEPPERONI PIZZA MUFFINS
Serves 2
1 cup flour
1 teaspoon baking powder
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes
1 cup milk
1 egg
1 cup mozzarella, shredded
1/4 cup Parmesan, grated
1 cup pepperoni, sliced
Pizza sauce
Preheat oven to 375 degrees. Stir together flour, baking powder, italian seasoning, and red pepper flakes. In a separate bowl, whisk together milk and egg. Combine wet and dry ingredients. Fold mozzarella, pepperoni, and parmesan into mixture. Divide batter into a greased muffin tin. Bake for 20-30 minutes, or until golden brown. Serve with pizza sauce.
