GOAT CHEESE & BABY BELLA ZITI

Pasta is the dinner that makes me feel most comfort food. To me it’s one of our household equivalent of slaughtering the fattened calf. LET’S HAVE PASTA! It is romantic and cozy and definitely nice in the winter. Do you like bella mushrooms? My husband really does, especially sautéed in butter. YES PLEASE. Some people are wary of them but you could give it a try. Also goat cheese is maybe polarizing too, but WE LOVE IT.

GOAT CHEESE & BABY BELLA ZITI

GOAT CHEESE & BABY BELLA ZITI
Serves 5-6

5 tablespoons butter, divided
1 onion, sliced
1/2 teaspoon sugar
1/4 teaspoon salt
5 baby bella mushrooms, sliced
4 tablespoons olive oil
3 tablespoons parsley, chopped
1 pound ziti, cooked al dente with 1/4 cup pasta water reserved
3 ounces goat cheese, crumbled
1/4 cup Parmesan, grated

Melt 3 tablespoons butter in a large skillet over medium heat. Add onion and sugar to pan and cook for about 20 minutes, until browned and caramelized. Season with salt. Meanwhile, begin boiling a large pot of water. Once onions are caramelized, remove from pan and set aside.

In the same skillet, melt remaining 2 tablespoons of butter. Add mushrooms and parsley and cook for 6 minutes. Toss ziti in a large bowl with onions, mushrooms, goat cheese, and pasta water. Top with parmesan.
