PEAR & BRIE CHERRY CHIPOTLE PANINI

The panini maker is one of my favorite of our somewhat indulgent wedding registry choices. We use it all the time and something about a cafe-esque toasting can make boring sandwiches feel much more sophisticated. This panini will treat your monday to friday packed lunch to something a bit more glam, but with regular grocery store ingredients you might already have around. I LOVE FRUIT IN SANDWICHES AND BELIEVE I ALWAYS WILL.

Pear & Brie Cherry Chipotle Panini from Rachel Schultz

PEAR & BRIE CHERRY CHIPOTLE PANINI
Serves 3-4

6 tablespoons cherry jam
1 chipotle pepper, chopped
1 teaspoon adobo sauce
4 ciabatta rolls
4 ounces brie cheese, sliced
3/4 pound sliced deli turkey
1 pear, sliced
3/4 cup spinach

In a small bowl, mix together cherry jam, chopped chipotle, and adobo sauce. Slice ciabatta rolls and spread sauce on either both buns. Layer brie, turkey, pear, spinach, and more brie.

Cook in panini maker until toasted, or in a skillet like grilled cheese. Slice in half and serve.
