FETA & SPINACH MINI PASTRIES

Please prepare yourself, because these pastries are going to vanish. Their savory goodness and perfect mini size will keep people grabbing at them until they’re gone. Served at a party, I suspect you’re going to get more than a few recipe requests. Frozen puff pastry. It it so handy. But like side note, I’ve never ever seen an off-brand version. Like, who carries one?

FETA & SPINACH MINI PASTRIES
Serves 18 pastries

2 cups spinach
1 teaspoon olive oil
4 ounces crumbled feta
2 tablespoons grated parmesan
2 green onions, sliced
1/4 teaspoon garlic powder
A dash of red pepper flake
1/4 teaspoon pepper
2 eggs, divided
1 pound frozen puff pastry sheets, thawed

Preheat oven to 350 degrees. Saute spinach with olive oil in a skillet over medium heat until spinach is wilted. Remove from heat and combine in a bowl with feta, parmesan, green onions, garlic powder, red pepper flake, pepper, and 1 egg. Slice each sheet of puff pastry into nine squares. Spoon feta mixture into center of each square, leaving space for folding. Fold pastry diagonally. Whisk remaining egg with 1 tablespoon of water. Brush egg wash over top of pastries. Bake for 25 minutes.

    i think trader joes sells their own brand of puff pastry — though i can’t be for certain. and i remember looking for it once during summer months and an employee told me they only had it around christmastime.

    Have you tried to use filo pastry? Also to use cottage cheese? I live in New Zealand and a cook in a cafe always looking for new ideas.I happened to come across your blog on about.com.

      I was trying filo and ended up throwing out the filo…it was too hard to work with but the seven I did make with filo were delicious…haha

    I made these for a Christmas brunch this past weekend and sure enough, they were a hit. I did have a few recipe requests, but the thing that really shows how delicious these things are is that my relatively picky toddler calls them cookies. He refuses to acknowledge they are anything but dessert. Also, I ran out of puff pastry and didn’t have time to make more (I used Gordon Ramsey’s ruff pastry recipe), and used two premade pie shells rolled together (rolled to be as thin as one crust) for the second half of the filling. I couldn’t actually tell the difference.

    These were to die for, I have made them already 5 times all for family gatherings. The only thing I did them different (for the life of me I couldn’t seal the triangle) I put the squares in a mini muffin pan and then filled and baked them. They were the most delicious, prettiest cups ever. Thank you for sharing this yummy recipe with us :)

    Hi Rachel, I’m a little confused….when you combine the skillet foods in the bowl with the feta, green onion, s&p and two eggs won’t the mixture be runny? Are the eggs suppose to just cook in the pastry? Sorry if these seem like silly questions, I have never cooked anything but scrambled eggs and never cooked pastries but I want to try this. Thanks! :>

      No, the feta makes it thick. THe egg will cook inside the pastry. Not silly! So glad you asked and that you’re trying out cooking!
