Root Beer Pork Taco Salads from Rachel Schultz

ROOT BEER PORK TACO SALADS
Serves 5-6

2 pounds pork loin
2 cups root beer
1 cup tomato sauce
3 cloves garlic, minced
2 heads lettuce, chopped
2 cups cheddar cheese, shredded
15 ounces black beans
1 red onion, chopped
Tortilla chips
Salt & pepper

Place pork loin in slow cooker with 1 cup water. Cook on low for 3-4 hours. Remove pork loin from pot and discard water. Shred pork with two forks and return to crock pot. Season with salt & pepper. Add root beer, tomato sauce, and garlic and stir.

Cook on low for 1 hour. Remove pork shreds and assemble taco salad with tortilla chips, lettuce, cheddar, beans, and red onion.
