Rachel: I’m really excited to go on our church’s family camping trip this weekend.

David: That surprises me.

Rachel: Why?

David: I didn’t think you liked camping.

Rachel: Why?

David: Based on your personality, I just thought you wouldn’t like camping.

Rachel: …

David: …

David: …

Rachel: What’s that supposed to mean?

Both: [Laughter.]

Grilled Corn Salsa with Cilantro Vinaigrette from Rachel Schultz

GRILLED CORN SALAD & CILANTRO VINAIGRETTE
Serves 3-4

5 ears corn, grilled
2 avocados, diced
12 ounces medley tomatoes, halved
1/2 red onion, diced
3/4 cup feta, crumbled
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon garlic powder
2 tablespoons cilantro, minced
Cooked chicken, shredded (optional)
Salt & pepper

Grill corn and remove kernels from cob. Combine corn with tomatoes, red onion, and salt & pepper.

Top with feta and avocado.

Whisk together olive oil, vinegar, garlic powder, and cilantro.

Drizzle dressing over salad.

Ingredients
  • 5 ears corn, grilled
  • 2 avocados, diced
  • 12 ounces medley tomatoes, halved
  • ½ red onion, diced
  • ¾ cup feta, crumbled
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • 2 tablespoons cilantro, minced
  • Cooked chicken, shredded (optional)
  • Salt & pepper
Instructions
  1. Grill corn and remove kernels from cob.
  2. Combine corn with tomatoes, red onion, and salt & pepper.
  3. Top with feta and avocado.
  4. Whisk together olive oil, vinegar, garlic powder, and cilantro. Drizzle dressing over salad.
