I love a good onion ring! Crunchy with a hint of sweet. This recipe could even manage to get rid of the onion ring’s only fatal flaws. First, that thing where you take a bite and then the entire onion slips out leaving only a hollow ring of breading. And second, that they’re quite unhealthy. (Or is that one of it’s strengths?) Both problems fixed. Panko, butter, and sweet, sweet onions. Less bread but still delicious and many ways you could use them. Are you enticed?
CRISPY PANKO-TOPPED BAKED ONIONS
Serves 5-6
3 sweet onions
1/4 cup panko
2 tablespoons butter, melted
2 teaspons thyme
Salt & pepper
Cooking spray
Preheat oven to 400 degrees. Peel and remove ends from onions. Slice in half. Arrange halves in a 9×13 baking dish lined with aluminum foil. Spray each side with cooking spray and season with salt & pepper.
With smaller ends facing up, bake for 40 minutes, or until slightly golden. Meanwhile, mix together panko, butter, and thyme.
Remove onions from oven. Flip and top with panko spread. Bake for 25-30 minutes.
