CAKE MADE OF FRUIT

You might call this fruit cake. But it would be FRUIT CAKE NOT LIKE YOU’RE THINKING. That one is for christmas and this one is for summer. Instead, “a cake made of fruit.” This is a very fun presentation of a summertime snack! I imagine it would be a delight for children. You can also have a lot of fun thinking of ways to decoratively place different types of fruit. And slice into it and serve a refreshing wedge of it. To hold things in place (like the kiwis pictured here) just use toothpicks!

Fruit Cake (But not like you're thinking) from Rachel Schultz

FRUIT CAKE (BUT NOT LIKE YOU’RE THINKING)
Serves 7-8

1 watermelon
4 kiwis, sliced
4 strawberries, halved
2 ounces blueberries
1 bundle grapes

Slice ends off of watermelon and remove shell from remaining section. Set on cake stand. Arrange individual grapes around base of “cake.” Attach kiwi slices to sides using toothpicks. On top of melon, shape strawberries into a star, piling blueberries in the center.
