One of David’s all time favorite food flavors is certainly sun dried tomatoes. He just cannot get enough of them. There’s this sun dried spread for toast that he is in love with. It’s expensive though. I remember dating in college and sometimes for groceries he’d buy like, powdered mac & cheese, a loaf of bread, and that spread. He was willing to go without at least three food groups TO GET SOME OF THAT TOMATO-Y GOODNESS. And for that, I respect him. (As well as other reasons.)
I take pre-cautions to include SDT’s in lots of things. I even considered making them homemade once. Maybe soon!
SUN DRIED TOMATO BASIL MEATLOAF
Serves 5-6
1 and 1/2 pounds ground turkey
3 eggs
1 yellow onion, diced
6 cloves garlic, minced
3 cups panko
1 cup parsley, chopped
4 ounces mozzarella, sliced
Sun dried tomatoes
1/3 cup basil
Salt & pepper
Preheat oven to 400 degrees. Combine turkey, eggs, onion, garlic, panko, and parsley in a large mixing bowl.
Spread onto a sheet of parchment paper and form a large rectangle, about 10×15 inches.
Place sun dried tomatoes, mozzarella, and basil across meat. Shape meat into a roll and place in a greased 9×13 glass baking dish. Season with salt & pepper.
Bake 60 minutes.
