BALSAMIC BLUEBERRY GRILLED CHEESE

A common question I get on the blog is: what is your favorite thing you’ve made? My answer is usually roasted strawberry & chocolate grilled brie – which is kind of a big deal because as of this post, I’ve shared 278 recipes. (Wow! That feels surprising!) So it’s saying something that this sandwich reminds me a lot of that other one. By association alone it’s earned it’s place as a tasty, grown-up grilled cheese. Also it’s just a very pretty grilled cheese.

Balsamic Blueberry Grilled Cheese from Rachel Schultz

Balsamic Blueberry Grilled Cheese
Serves 2

1 cup blueberries
2 tablespoons balsamic vinegar
3 tablespoons brown sugar
4 slices wheat bread
1 cup spinach
4 slices havarti
Ground pepper

Heat blueberries, vinegar, and brown sugar in a saucepan over medium heat for 5 minutes.

Strain and set aside. Layer half of havarti and spinach leaves onto one slice of wheat bread. Spread blueberry mixture over spinach.

Top with remaining havarti and ground pepper.

Place another bread slice over cheese. Heat a skillet over medium heat and cook sandwich on each side for 2-3 minutes, or until cheese is melty.

    I’ve never made grilled cheese before but this was amazing and very easy to make. So so delicious. The flavors are complex and compliment each other perfectly!

  • Today I bought the most wonderful tasting Blueberry Balsamic Vinegar. Even though I think I could just drink it since it is so delicious, I did a quick google search for recipes and landed on your post about the Balsamic Blueberry Grilled Cheese. Oh. My. Gosh. I actually began to salivate as I was reading. I am a big fan of grilled cheese and of blueberries. I can’t wait to try your sandwich recipe! I will keep searching for a way to use my delicious blueberry vinegar, but meanwhile I will be running out to get Havarti so I can try your sandwich!
