Life wound down from Thanksgiving for maybe one day, but now it’s Christmas – head on and fully loaded. I’ve been making lots of casseroles lately. Assembling all the food groups in one dish is just so convenient, I turn to dinners like this over and over. I’m always experimenting for new ones so as to not tire out the classics. And I have a firm policy for no sloppiness or cream of artificial type stuff going into our dishes.

This sausage and white bean number does the job just right.

SAGE & SAUSAGE WHITE BEAN CASSEROLE
Serves 3-4

2 cups homemade bread crumbs
1/2 cup sage leaves
1 yellow onion, diced
4 cloves garlic, minced
1 pound sausage, sliced
1/2 cup apple juice
30 ounces white beans
Salt & pepper

Preheat oven to 350 degrees. In a skillet over medium high heat, cook onion and garlic for about 5 minutes.

Add sausage and apple juice to skillet and cook for 5 more minutes. Add beans and heat a final 5 minutes.

Transfer mixture to a greased 9×13 baking dish. Top with bread crumbs and sage leaves. Bake for 25-30 minutes.
