PEANUT BUTTER STUFFED MARSHMALLOW BROWNIE BITES

Window shopping has become one of my favorite dates. Book stores, obviously. That’s one of our favorites. Another one is housewares and cooking places. We stopped in last week to do some real shopping (for Christmas gifts). Smelling the smells. Sampling the samples. Trying to decide if I actually find all copper cookware desirable. I never thought I liked marshmallows. They were merely dry, flavorless cotton balls to me. Like every warm bodied individual, I obviously loved s’mores.

But snacking on just stale marshmallows would be a waste of time. And taste buds. Then I had peppermint marshmallows samples with hot chocolate. Newton’s fifth law states that when something is a free sample, even if you do not like it, you will try it anyway. So there I was eating the marshmallow. Wow. Marshmallows can taste like this? Sign me up.

I rushed home with a new interest in the fluffy white guys. Maybe I’ll try making my own soon. For now, throw ’em in these brownies bites. They’re so good you can even get by with the non-speciality or gourmet kind.

PEANUT BUTTER STUFFED MARSHMALLOW BROWNIE BITES from Rachel Schultz

PEANUT BUTTER STUFFED MARSHMALLOW BROWNIE BITES
Makes 24 brownie bites

1 box chocolate cake mix
3/4 cup butter, melted
1/3 cup evaporated milk
12 marshmallows, halved
24 peanut butter cups
2 cups thick chocolate frosting

Preheat oven to 350 degrees. Mix together cake mix, butter, and evaporated milk. Divide batter into a greased, mini muffin pan.

Bake for 8-10 minutes. Remove from oven and press peanut butter cups into each brownie. Top with marshmallow.

Bake for 2-3 more minutes. Allow to cool and top with frosting.

    I’ll have to give you my homemade marshmallow recipe. I wasn’t a fan of them either … until I had them homemade. Deee … lish! And their actually really simple to make, even better!
