Firstly, I apologize for my absence yesterday. As for food, I shared my recipe for blackberry lemon cheesecake bars. They are a lovely, classic cheesecake. If you’re in the market for something faster, but just as delicious, I submit to you this no bake cheesecake.
NO BAKE CHEESECAKE
Serves about 12
2 and 1/2 cup graham cracker crumbs
6 tablespoons sugar
2/3 cup butter, melted
2 cups powdered sugar
16 ounces cream cheese
1 teaspoon gelatin
16 ounce cool whip
Stir together graham cracker, sugar, and butter. Press into base of greased 9×13. (Option to bake for 6-8 minutes at 350 degrees. It will hold together better, but will be fine without this step – keeping it truly “no bake”!) Cream together powdered sugar, cream cheese, and gelatin.
Fold cool whip into mixture. Spread over graham crust and refrigerate for 1 hour.
