EDAMAME HUMMUS

Whenever I’m at a sushi restaurant, I feel like the edamame just needs to happen. Edamame by itself is so not filling, yet I can’t stop ordering it. Maybe because it’s so fun to eat.

This edamame hummus is more filling and a completely healthy snack to munch on. I’m not a huge hummus lover (I know!), but cool versions like this, I like.

EDAMAME HUMMUS from Rachel Schultz

EDAMAME HUMMUS
Serves about 2 cups

2 cups edamame, cooked
15 ounces garbanzo beans
3 cloves garlic
1/4 cup lemon juice
1/3 cup olive oil
Salt & pepper

Pulse ingredients together in a food processor. Serve with crackers or pita chips.
