Oh, one pot meals. Such music to my soul on the days that are the rushing around kind. Do you like lo mein? I will always be biased to any meal that dirties but one dish. If it is also delicious? My loyalty will endure many, many moons. If you are looking for even more weeknight dinner recipes, there are two hundred and fifty four of them here. Also important question: do you find yourself cutting carrots for different shapes in meals when you are in different moods?

ONE POT CHICKEN LO MEIN

ONE POT CHICKEN LO MEIN
Serves 3-4

2 cups vegetable broth
3 chicken breasts, cubed
12 ounces fettucine pasta
2 cloves garlic, minced
1 bell pepper, sliced
4 carrots, sliced
2 teaspoons sugar
1/2 teaspoon sriracha sauce
3 tablespoons soy sauce
1 tablespoon sesame oil
2 teaspoons rice wine vinegar
1/4 teaspoon red pepper flake
1/2 teaspoon onion powder
3/4 cup peas
3 green onions, sliced

Bring 2 cups water and vegetable broth to a boil in a large stockpot. Reduce to simmer and add chicken, cooking for 10 minutes. Add fettuccine, garlic, bell pepper, carrot, sugar, sriracha sauce, soy sauce, sesame oil, rice wine vinegar, red pepper flake, and onion powder to pot. Bring to boil and stir occasionally for 8-9 minutes. Add peas and cook for 1 minute. Strain any excess liquid and top with green onion.

  • ¼ teaspoon red pepper flake
  • ½ teaspoon onion powder
  • ¾ cup peas
  • 3 green onions, sliced
Instructions
  1. Bring 2 cups water and vegetable broth to a boil in a large stockpot. Reduce to simmer and add chicken, cooking for 10 minutes.
  2. Add fettuccine, garlic, bell pepper, carrot, sugar, sriracha sauce, soy sauce, sesame oil, rice wine vinegar, red pepper flake, and onion powder to pot. Bring to boil and stir occasionally for 8-9 minutes.
  3. Add peas and cook for 1 minute.
  4. Strain any excess liquid and top with green onion.

    Fell upon your recipe. Made this last night. It was really good except I could not in good faith use Fettuccini pasta instead of lo mein noodles. Also with all Asian dishes, I cut my veggies smaller-alot smaller. I also used snow peas no bell peppers.

  • Hi Rachel,
    Love the variation fo your lo mien recipe. In contrary, we only use fettuccine to cook traditional pasta over here in Malaysia. we usually use the Chinese noodle to prepare this dish. But I think is is nice too and I am going to try it.
