There are some foods that kind of just are summer. For me a few are strawberry shortcake, s’mores, peaches, popsicles, kabobs. And as included in this dip, BASIL. That smell of fresh basil – so totally summer. This recipe was buried in the blog archives from a while back when my girl Jenny shared with me. It needed to be re-vamped and brought to the forefront. Best part about it? Less than 8 ingredients and really just plain good.
BRUSCHETTA DIP
Serves 3-4
5 roma tomatoes, diced
1/2 red onion, diced
3 cloves garlic, minced
1/2 cup feta
1/2 teaspoon salt
1/2 teaspoon pepper
10 basil leaves, sliced thinly
Stir together tomatoes, red onion, garlic, feta, salt, and pepper. Chill in fridge for about 3 to 4 hours to allow flavors to combine. Fold in basil and serve with pita chips.
